Foret Noir

To celebrate Father's Day on June 19th, I made a chocolate cake called "Foret Noir" flavored with kirsch (cherry liqueur). The name Black Forest comes from the area of ​​coniferous forests in southwestern Germany that look black from a distance.

It's not impossible to get there from Alsace, where I was training (although it's quite a distance by car), so I went there twice to try the local Foret Noir. The first time, I also visited an old castle, and the second time, I stayed overnight in the hot spring town of Baden-Baden.

Baden-Baden is a high-end resort, and many people stay there for long periods of time for recuperation, so there are plenty of entertainment facilities such as casinos and brand shops.

Even though it's recuperation, it's not like the Japanese hot spring cure where you just keep soaking in the bath, but rather, like athletics, you walk in the bath, do exercises, complete tasks, and then swim in a heated pool at the end. The water was lukewarm and we had to wear swimsuits, but the training facility only had showers, so we still enjoyed it.

As for the important part, the Foret Noire, it was delicious no matter where we had it.

In Germany and Alsace, chocolate sponge with fresh cream is the standard, but at Maison Benico, they sandwich it with chocolate fresh cream.
